Feed a cold, starve a fever

Lemon Ginger and Honey Traybake

Our house seems to have full of cold germs every since I went back to work; pesky kids and their germs!  To combat the bunged up noses and sore throats I’ve been drinking hot honey and lemon, sometimes with a cheeky tot of whisky, to make myself feel better.  This has extended to my baking, so here’s a lemon, ginger and honey traybake as a bit of comfort food.

You will need:

250g butter, 280g self-raising flour, 250g caster sugar, 1/2tsp baking powder, 4 eggs, 150ml natural yogurt, 1tsp vanilla essence, juice and rind of a lemon, 1tsp ground ginger, 60g honey.

Preheat the oven to 180°C. Grease and line a 20x30cm baking tin.  Cream together the butter and sugar, add the eggs one at a time.  Add the rest of the ingredients and mix until well combined into a smooth batter.  Pour into the prepared tin and bake for 30 minutes or until a skewer inserted into the centre of the cake comes out clean.
