The problem with going back to work is that I never seem to get a chance to eat at the right times during the day so I get home and I’m absolutely ravenous! I can just about deal with feeding my little family by sticking to my menu planning but I’m not great at planning puddings. We’re not a big pudding family, I prefer savoury at dinner time and my husband and Baby B are quite happy with a yogurt, but sometimes we just fancy a change. These cooked in the time it took to do bedtime for Baby B. There was actually far more than this when I made them, but they disappeared rather quickly as you can see in the photo!
You will need:
150g butter, 50g cocoa powder, 150g soft brown sugar, 2 eggs, 50g self-raising flour, 40g chopped hazelnuts and 40g chopped glace cherries.
Preheat the oven to 180°C and grease and line a 18cm square cake tin. Cream together the butter and sugar. Add the eggs one at a time. Add the flour and cocoa powder and mix to form a smooth batter. Add the hazelnuts and cherries and fold in gently. Pour into the prepared cake tin. Bake in the oven for 40 minutes or until a skewer inserted into the middle of the cake comes out clean. Best enjoyed warm…. well they don’t actually last much longer in our house!
