Sometimes then you bake something it looks as ugly as sin. This doesn’t mean you should throw it out and start again, but rather you should try them with your eyes closed first! OK, the one in the picture above doesn’t actually look too bad. But just look at the rest of the batch when they came out of the oven:
UGLY!
They pretty much exploded all over my nice clean oven – oops! No matter, they taste really rather good considering they were a bit of a ‘I’ve got lots of stuff in the baking cupboard what that needs using up so let’s throw it altogether and see what happens!’
You will need:
60g butter
250g plain flour
2 teaspoons baking powder
150g demerara sugar
1 egg, beaten
250ml milk
40g cocoa powder
75g chopped walnuts
60g mini marshmallows (these cause all the gooey damage to your oven)
100g chopped glace cherries
Preheat the oven to 200°C and line a muffin tray with paper cases. This mix makes about 18 large muffins.
Cream together the butter and sugar in a large bowl. Mix in the egg and add the milk, flour and baking powder gradually. Mix in the rest of the ingredients until well combined.
Share the mixture between the muffin cases and place in the oven for 20 minutes until a metal skewer inserted into the middle of the cake comes out clean.
