Lemon Curd Lava Cakes

I obviously get my creative genes from my mum.  The other day she came round bearing the gift of a jar of homemade lemon curd.  I normally love her lemon curd, but at the moment my taste buds are all over the place!  Since it’s not chock full of additives and preservatives it needed to be eaten fairly quickly and there’s only so much lemon curd on toast that I can deal with!

These Lemon Curd Lava Cakes are so named because the lemon curd acts like lava inside them if you’re stupid enough to taste one as soon as they come out of the oven…..   You can just see it peeking out through the cracks in the surface….. but my brain didn’t kick into gear before I took my first bite!  Ouch!

You will need:

200g self raising flour

100g caster sugar

1 large egg

75ml sunflower oil

150ml milk

1/2 teaspoon vanilla essence

12 teaspoons of lemon curd.

Preheat the oven to 190°C/ 375°F and line a 12 hole muffin tin with paper cases.  Mix together the flour and the sugar in a large bowl.  In a separate jug mix together the egg, sunflower oil, milk and vanilla extract.  Pour this mixture into the dry mix and combine together.

Put a teaspoonful of the mixture into the base of a paper case, add a teaspoon of lemon curd and then top with some more of the cake mixture.

Bake for 20 minutes until risen and lightly browned.  Resist the temptation to eat them directly from the oven….
