Banana and Peanut Butter Cookies

I’ve found a new favourite – something I can whip up in minutes and feed a visitor at short notice.  Well I could, if there were any left.  You see that hand, that’s the hand of a greedy little monkey who won’t normally eat bananas but if you hide them and call them Monkey Cookies he can’t get enough of them!  He couldn’t even wait for me to take the photo before he started stealing them!  I thought they should be called Breastfeeding Cookies because they are great for scoffing while you’re feeding and I’ll definitely be making a batch as I visit all the new babies my friends and family have had recently.

You will need:  125g mashed banana, 130g smooth peanut butter, 70g soft brown sugar, 100g caster sugar, 165g self raising flour and 1tsp baking powder.

In a bowl stir together the peanut butter and banana until fairly smooth.  Stir in the sugars, flour and baking powder until well mixed.  Cover the bowl and place in the fridge for at least 1 hour.

Preheat the oven to 190ºC and line some trays with greaseproof paper.  Use your hands to roll the dough into 10p sized balls and flatten onto the baking tray using the back of a fork.  Although these cookies don’t spread too much as they cook, put plenty of space between each one to be on the safe side.  I baked in batches to ensure they didn’t stick together.  Bake for 12 minutes in the oven and allow to cool on the baking tray before storing in an airtight tin.
