During the last few weeks we’ve been terrible about using the food we have – a newborn baby in the house will do that! I’m so disorganised with cooking and planning our meals that I’ve thrown out far more food than I would like to admit to. This recipe was used to use up some bananas that were way past their best and were sat forlornly in the fruit bowl. It turns out that little B is very good at mashing bananas – most of it ended up in the mixture and not splattered across the kitchen!
You will need:
75g butter, 115g caster sugar, 2 medium eggs, 250g self raising flour, 1tsp baking powder, 1 tsp vanilla extract, 2 large ripe bananas (mashed), 125ml milk and 100g chocolate chunks.
Preheat the oven to 190ºC and line a 12 hole muffin tin with paper cases. Cream together the butter and sugar and add the eggs one at a time. Add the flour, baking powder, vanilla extract and milk and mix until well combined. Add the mashed banana and chocolate chunks – you will have a very lumpy mixture!
Place the batter into the prepared paper cases and bake in the oven for 25 minutes.
