I’m a big fan of a bargain and these courgettes were definitely that! I popped into the supermarket for some bread and milk on my way home from work one evening this week and spied a three pack of courgettes in the chiller for the bargain price of 20p. I couldn’t leave them there could I?! I thought I could make some ‘healthy’ muffins with them. I put that in quote marks because these ‘healthy’ muffins have a pile of sugar in them!
You will need:
3 medium eggs, 100ml sunflower oil, 75ml water, 250g caster sugar, 225g grated courgettes, 1tsp ground cinnamon, 225g self-raising flour, 30g cocoa powder and 125g raisins.
Preheat the oven to 190°C and line a 12 hole muffin case with paper cases. In a large bowl, mix together the eggs, oil, sugar and courgettes. Add the flour, cocoa, cinnamon and raisins. Mix gently. Spoon the mixture into the muffin cases until they are about 2/3 full. Bake in the oven for 20 minutes until the muffins have risen and a skewer inserted into the middle comes out clean.
What a bargain, only 20p!! And I bet sooo delicious too! x
