Another afternoon in the holidays, another group of friends coming round for a gossip and to let the kids play with some different toys! Calls for some biscuits doesn’t it! These are delicious and don’t taste as peanut buttery as the name suggests.
You will need:
125g butter, 125g caster sugar, 125g peanut butter (I used smooth as I was feeding them to little people!), 125g golden syrup, 225g plain flour, 1tsp bicarbonate of soda, 100g milk chocolate chips, a splash of milk as necessary.
Preheat the oven to 180°C and line two baking trays with greaseproof paper. Cream together the butter and sugar. Add the peanut butter and golden syrup and mix together. Sift in the flour and bicarbonate of soda and add the chocolate chips. Mix together until well combined. You may need to add a splash of milk to loosen up the mixture if it’s too stiff.
Spoon teaspoons of the mixture onto a baking sheet with LARGE gaps between them – these cookies will spread like you wouldn’t believe! Bake in the oven for 10-12 minutes. Eat fairly soon after cooking and they’re beautifully squidgy!
