Firstly, I must apologise for this photo. It was one of those evenings where the feeding of the small, screaming hungry child was more important than taking photos for the blog and by the time I remembered these were the only ones left!
This recipe combined two of Billy’s favourite foods; sweet potato and sweetcorn. I think he would live on them given half a chance! I baked three sweet potatoes in the oven for 45 minutes and then cut them in half to let them cool. I mashed the potato and added three flaked fillets of mackerel and about 50g sweetcorn. I shaped them into fishcake shapes and fried them over a gentle heat. Delicious with salad!
