I often pick up the free food magazines that you get in supermarkets because I like the recipes. They’re normally fairly simple and don’t require thousands of fussy ingredients. I found a similar recipe in the Co-operative food magazine and, of course, I adapted it!
You will need:
1tsp olive oil, 1 onion, 2 medium eggs, 200g plain flour, 1tsp baking powder, 1tsp french mustard, 1 grated courgette, 100g cheddar cheese, 150ml water
Preheat the oven to 200°C/ Gas mark 6. Chop the onions and gently fry them in the oil. Grate half of the cheese and courgette into an oven safe baking dish. In a bowl combine the flour, baking powder, water, mustard and egg and mix together with the courgette, cheese and onions. Grate the rest of the cheese over the top. Bake in the oven for 35-40 minutes. I served it with baked beans. This recipe could be really easily adapted to use whatever vegetables you have left over.
