Yes. You read that correctly! I know it’s a bold claim, but it is and I will be forever grateful to my Teaching Assistant for introducing it to me!
“Do you like Rocky Road?” she asked me innocently one day.
“Of course,” I replied. “Who doesn’t?”
It transpired that she’d brought in a tin of Rocky Road to help myself and my year group colleagues get through our planning afternoon at work. I’m not entirely sure it helped us with the planning, but it definitely made us feel better about life in general! She’d even made enough that we were able to save a piece each to help us get through our staff meeting on the following day!
The next day I asked for the recipe and I’ve been making it for friends ever since! This is my version of the recipe (originally from the Ocado website).
You will need:
200g dark chocolate, 200g milk chocolate, 150g unsalted butter, 150g mini marshmallows (or normal sized snipped into small pieces), 150g crushed biscuits, 80g Maltesers, 50g fudge pieces and 4 tbsp good quality cherry jam.
Break the chocolate into pieces and add the chopped butter and melt gently over a pan of simmering water. Stir regularly. Add all the remaining ingredients, except the jam, and stir until well combined.
Spoon half of the mixture into a prepared 20cm x 20cm tin that has been greased and lined with cling film. Dot the jam on the surface and then cover with the remaining mixture.
Place in the fridge overnight until set and cut into bite sized chunks.
Added to post- I’ve discovered that this recipe freezes really well. I put it in the freezer after the final step and defrosted it overnight, about three weeks later, in the fridge . It’s as delicious as the original batch!
