Recently we visited Monkey Forest near Stoke to meet up with some old friends. It’s 20 years since we met at university and we now don’t meet up as often as we’d like as organising dates around work and the children is a bit of a nightmare. We took a picnic (how life has changed now we have children – our meet ups used to be long, lazy afternoons spent in a cosy pub!) and I thought some chocolate Crackolate Cakes would be just the thing to share.
My mum is the only person I know who calls them ‘Crackolate’ cakes, I’ve never questioned why. Everyone else I know calls them ‘Crispy’ cakes. I should ask her one day!
These are so quick to make, but you do have to do a little bit of planning ahead as they need time to set, ideally overnight.
You will need: 1 large bar (100g) of your chocolate bar of choice, anything works, 2 handfuls of cereal, whatever you have in the cupboard but flakes work best and sprinkles (optional).
Melt the chocolate over a saucepan of boiling water and remove from the heat. Gently stir in the cereal, you may need to add a bit more, you want a well coated mixture with no chocolate dripping off. Place the mixture into paper cases and put the sprinkles on the top. Place the cakes in the fridge to make sure the chocolate sets quickly. Keep in an airtight tin.
