Sunshine salad

The beautiful weather last weekend inspired me to create a new salad, when my sister saw it she christened it ‘sunshine salad’!  It’s an appropriate name when you see how colourful and cheerful it looks.

I’m not big salad person; I can’t be bothered with the wateriness of some salads, they just taste like nothing to me, but my brother-in-law is on another diet that means he basically lives on salad so I decided to get creative!

You need:

2 handfuls of sweetcorn – I cooked some frozen sweetcorn and let it go cold

2 large roasted peppers, sliced – I used some from a jar

half a cucumber cut into sticks

100g feta cheese broken into pieces

zest and juice of a lime

Mix all the ingredients in a bowl and you’re done.  Make sure everything’s at room temperature before you eat it, it tastes much better that way. I would have taken some photos, but it was all eaten up too quickly! I defy you not to smile as you eat it!
