Plum Crumble

I’m trying to be good and buy more fruit to eat with Baby B but I’m just not very good at it!  Too many years of ignoring the fruit bowl are to blame for that! So there were loads of plums in the fruit bowl that were beginning to look a little bit sorry for themselves so a nice pudding was in order.  We didn’t have anyone coming round for dinner so I made two little ones that serve two (three if you’re not as fond of pudding as we are!) each and put one in the freezer for another evening.

You will need:

8 plums,  a good drizzle of maple syrup, 150g plain flour, 100g butter, 75g demerara sugar, 60g oats.

Preheat the oven to 200°C/ Gas mark 6.  Halve and stone the plums and lay them in an oven dish, drizzle the maple syrup over according to taste.  In a bowl rub together the flour and butter until they look like breadcrumbs and mix in the oats and sugar.  Spread across the top of the plums.  Bake in the oven for 35-40 minutes.  Serve with custard or ice-cream.
